A savory version of cream puffs (or gougeres) made with pate a choux, these little snackers are light as air and loaded with delicious cheese! Make them ahead for a party appetizer or serve them with your favorite deli meats.
The dough for these cheesy bites starts with the same basic recipe as other choux pastry treats, such as eclairs and cream puffs. But instead of filling the resulting puffs with sweet filling, this dough is mixed with shredded cheese and a touch of thyme for a savory treat.
To prepare the choux dough, bring water, butter and salt to a boil in a medium saucepan over high heat. Then lower the heat and add flour all at once, stirring energetically with a wooden spoon until the dough forms into a ball and has a light film on the bottom of the pan. Remove the pan from the heat and let cool for a few minutes. Then beat in eggs one at a time, mixing thoroughly after each addition. The dough should be smooth, shiny and very firm, but still pliable enough to hold its shape.
To assemble the gougeres, either scoop small mounds of dough onto prepared baking sheets or pipe the dough into bun-shaped rounds 2 inches apart. Brush each with egg wash and sprinkle with Pecorino Romano cheese. Bake until the puffs are puffed, golden and feel firm but still light when they’re picked up. بف جبن
